This is my own creation. I just took whatever leftover ingredients that I had in my fridge and made a very thick pasta sauce. It was good but the taste was very strong. I added Chinese chili paste to it so it was spicy in a different way than red pepper flakes.

Ingredients:

  • 4.5 cups farfalle
  • 2 TB extra virgin olive oil
  • 0.5 lbs prosciutto ends
  • 5 cups baby spinach leaves
  • 1-2 TB Chinese chili paste
  • Parmesan cheese

Instructions:

  1. Cook the pasta in a large saucepan of boiling salted water until al dente. Drain well and return to pan to keep warm
  2. Heat the oil in a frying pan over medium heat
  3. Add the prosciutto and cook for 3 minutes
  4. Toss the spinach leaves through the prosciutto for 30 seconds or until the leaves are wilted
  5. Add the prosciutto and spinach mixture to the pasta, then stir in the chili paste
  6. Season and toss well
  7. Sprinkle with Parmesan cheese to serve
