I’ve been looking forward to today since last Sunday. I’ve had 4 exams this past week, MCAT classes, and I have a practice MCAT exam tomorrow. So I’ve been really tired and going out to eat a lot. I barely cooked at home during this past week; I had dinner at home on Wednesday night.

I can’t believe I haven’t posted any shrimp dishes yet. Shrimp is my favorite seafood. When I lived in Hong Kong (age 8-15), I used to eat 1-2 pounds of fresh shrimp almost every night. When Mo and I were at Whole Foods today, we decided to have a cooking night! I made stuffed conchiglione and Mo made pork tenderloin. I stuffed the conchiglione with butternut squash, potatoes, and ricotta cheese, topped it with tomato sauce and Parmesan Reggiano cheese.

It’s been awhile since I’ve had homecooked pasta so I made my arrabiata sauce again, adding mushrooms, spinach, and minced pork. I love using Thai basil so I substituted that for the regular sweet basil. I ran out of red wine (not even 0.25 cups) so I used white wine for the remaining 0.75 cups.

One of my favorite pasta sauces is arrabiata. It has an intense taste, with a touch of spiciness, and I think it works perfectly for any long pasta. The first time I noticed that I was eating arrabiata was at Enoteca Vespaio, one of my favorite places to eat in Austin.
