Dumplings: Jiao Zi/Gyoza
饺子
If you pan fry these, you will know these as “pot stickers”. They’re the same thing, except cooked differently. The 2 differences between jiaozi and wontons are the shape and thickness of the wrapper. Jiaozi are thick round wrappers and wontons are thin square wrappers. In the supermarket, they’re all thin but when I’m at [...]

Dumplings: Rate of 82 Per Hour
That’s my rate, 82 dumplings/hour. It doesn’t seem a lot.
Beautiful:
Note: photo does not show all 82 dumplings.
Recipe here.

排骨萝卜冬瓜木瓜汤
It’s been rather ugly in Austin for the past few weeks. Every end of the week, it has been gloomy, cloudy, and just depressing! Today – thunderstorms and rain and temperature dropping. Luckily I had all the ingredients to make a family recipe of pork bone soup. It’s all nice and cozy – relaxing on [...]

Dumplings: Hun Tun/Wontons 1
馄饨
I love eating dumplings and bigger props if they’re homemade but I don’t have the time/luxury to make my own wrappers though. I love having shrimp in the filling but tonight I only made it with ground pork, napa cabbage, and garlic chives.

Ingredients:
Wonton wrappers (they’re square-shaped. Circles are for 饺子/jiaozi/potstickers/gyoza)
Soy sauce
Salt
Sesame oil

My favorite poultry is whole duck and I really love eating geese wings, cooked the Chinese way. I bought a 4.4-pound duck the other night and today I finally had the time to cook it.

Whole duck (sans organs), neck and head optional (I save those for making soup)
3 TB five spice powder

瑶柱蛋炒饭
This is my favorite type of fried rice. The Cantonese make this to perfection. Ahhh… I’m already craving for it again. The authentic recipe calls for egg whites only but I always add the yolks in; egg is egg.
Oh yeah, in Chinese culture, fried rice is usually made with leftover rice from the previous night. [...]

Green Onion Pancakes
葱油饼
I’ve been eating green onion pancakes since I was born. I don’t like how restaurants make them so oily and burnt. I like the way my mother makes them. You can also buy them pre-made (frozen) in Chinese supermarkets but they are very thin and do not taste very good.

Ingredients:
3.75 cups flour, sifted
2 tsp [...]

It was only 2 weeks ago, during Thanksgiving, that my Aunt made this for dinner on Saturday night. I changed it up a bit but it’s basically the same recipe, I added a vegetable serving. I love the colors of this dish. I also like the crispy skin :] [100% organic & wild] [...]
