I can’t believe I haven’t posted any shrimp dishes yet. Shrimp is my favorite seafood. When I lived in Hong Kong (age 8-15), I used to eat 1-2 pounds of fresh shrimp almost every night. When Mo and I were at Whole Foods today, we decided to have a cooking night! I made stuffed conchiglione and Mo made pork tenderloin. I stuffed the conchiglione with butternut squash, potatoes, and ricotta cheese, topped it with tomato sauce and Parmesan Reggiano cheese.
